Scale

Salad Ingredients

  • 8 slices bacon (cooked until crispy)
  • 4 eggs (hard-boiled)
  • 2 chicken breasts (from rotisserie or cooked)
  • 1 head iceberg lettuce (cut into wedges)
  • 1 cup cherry tomatoes (halved)
  • 3 Persian cucumbers (chopped)
  • 3 ounces Stilton blue cheese (crumbled)
  • 1 ½ medium avocado (sliced)
  • 1 bunch radishes (quartered)
  • 4 pepperoncini (sliced)
  • ½ cup pickled red onions
  • 2 sprigs dill (torn)
  • 2 sprigs tarragon (torn)
  • 1 teaspoon flaky sea salt (for serving)

Dressing Ingredients

  • 3 tablespoons sour cream (or Greek yogurt)
  • ¼ cup mayonnaise
  • 2 tablespoons buttermilk
  • 2 teaspoons lemon juice
  • 4 tablespoons pickled red onions (finely chopped)
  • 4 tablespoons dill (finely chopped)
  • 4 tablespoons tarragon (finely chopped)
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt

Instructions

  1. Prepare the Dressing: In a bowl, combine sour cream or Greek yogurt, mayonnaise, buttermilk, lemon juice, finely chopped pickled red onions, dill, tarragon, garlic powder, and kosher salt. Mix well until smooth and set aside to let the flavors meld.
  2. Cook the Bacon: Cut the bacon into 1-inch pieces. Heat a skillet over medium heat and cook the bacon pieces until crispy. Transfer the cooked bacon to a paper towel-lined plate to drain excess grease and set aside.
  3. Hard Boil the Eggs: Place the eggs in a pot of cold water, bring to a boil, then reduce to simmer and cook for 10 minutes. Remove the eggs, cool under cold running water, peel, and quarter them.
  4. Prepare the Chicken: Slice the chicken breasts from a rotisserie chicken or cooked chicken into bite-sized pieces for easy serving and eating.
  5. Prepare Vegetables: Cut the iceberg lettuce head in half, then into 5 wedges. Halve the cherry tomatoes, chop the Persian cucumbers, quarter the radishes, slice the pepperoncini, and prepare any remaining fresh herbs by tearing them.
  6. Assemble the Salad: Arrange the iceberg lettuce wedges on a large serving platter. Drizzle some of the dressing over the lettuce. Add the sliced chicken evenly across the wedges, then scatter the cherry tomatoes, cucumbers, radishes, pickled red onions, bacon pieces, pepperoncini, and crumbled blue cheese over the top. Drizzle additional dressing over the salad and garnish with torn dill and tarragon. Sprinkle flaky sea salt evenly across the salad. Serve additional dressing on the side.

Notes

  • Use rotisserie chicken for convenience; alternatively, grilled or roasted chicken breasts work well.
  • Adjust the dressing ingredients to taste, more lemon juice can add extra brightness.
  • For a lighter version, substitute sour cream with Greek yogurt and reduce mayonnaise.
  • Make the dressing ahead of time to allow flavors to develop.
  • Serve the salad chilled or at room temperature for best flavor.
  • Feel free to swap Stilton blue cheese with other blue cheese varieties to your preference.
