Ingredients

Scale

Muffin Batter

  • 1 3/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup pitted fresh cherries (or frozen cherries, thawed and drained)

Cobbler Topping

  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, diced

Instructions

  1. Preheat & Prepare Pan: Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line it with paper liners to prevent sticking and make removal easy.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined to ensure even distribution of leavening agents.
  3. Combine Wet Ingredients: In a separate bowl, whisk the milk, vegetable oil, egg, and vanilla extract until the mixture is smooth and homogenous.
  4. Assemble the Batter: Pour the wet ingredients into the bowl with the dry ingredients. Stir gently with a spatula just until the flour is moistened; avoid overmixing to keep the muffins tender. Carefully fold in the pitted cherries evenly throughout the batter.
  5. Prepare the Cobbler Topping: In a small bowl, mix the flour, brown sugar, and cinnamon. Add the cold diced butter. Using a fork or pastry cutter, cut the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized pieces.
  6. Fill & Top Muffins: Spoon the muffin batter into the prepared muffin cups, filling each about two-thirds full to allow room for rising. Evenly sprinkle the cobbler topping mixture over the batter in each cup to create a crunchy, sweet crust.
  7. Bake: Place the muffin tin in the preheated oven and bake for 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean, indicating they are fully baked.
  8. Cool & Serve: Allow the muffins to cool in the pan for 5 minutes to set, then transfer them to a wire rack to cool completely. Enjoy them warm or at room temperature for the best flavor and texture.

Notes

  • Fresh cherries work best, but frozen cherries can be used if thawed and well-drained to avoid soggy batter.
  • Do not overmix the batter to prevent tough muffins; a few lumps are fine.
  • For a dairy-free version, substitute milk with almond or soy milk and use a dairy-free butter alternative for the topping.
  • These muffins are best enjoyed within two days but can be stored in an airtight container at room temperature for up to 3 days or frozen for longer storage.
