Instructions

  2. Mix in fresh ingredients and cheese: Stir in the drained corn, finely chopped jalapeño, scallions, garlic, chopped cilantro, crumbled feta, and 1 cup of shredded Monterey Jack cheese into the creamy base until well combined.
  3. Transfer to baking dish: Pour the corn mixture into a medium baking dish or cast-iron skillet, spreading evenly. Sprinkle the remaining 1/4 cup of shredded Monterey Jack cheese over the top to create a cheesy crust.
