Instructions

  1. Make the Dough: In a large bowl, combine the self-raising flour and Greek yogurt using a spoon until a rough dough forms. Knead the dough for about 2 minutes until soft and light, ensuring it does not stick to your hands. If it feels sticky, sprinkle a little more flour. Wrap the dough in plastic wrap and let it rest for 5 minutes.
  2. Preheat Oven & Roll Dough: Preheat your oven to 220°C (450°F). Lightly flour a clean surface and roll the rested dough into a large oval about 0.5 cm thick. Transfer the rolled dough onto a baking tray prepared for baking.
  3. Apply Cheese and Pepper: Spread one-third of each cheese (mozzarella, feta, and cottage cheese) around the rim of the dough evenly, then sprinkle 1 teaspoon of ground black pepper over the cheese-lined rim.
  4. Form the Crust and Fill: Fold the rim of the dough over the cheese to create a crust edge filled with cheese. Then fill the central well with the remaining cheeses, layering them in order: feta, cottage cheese, and mozzarella. Sprinkle additional ground black pepper on top of the filling. Beat one egg in a bowl and brush it over the crust and any exposed dough for a golden finish.
  5. First Bake: Place the pie in the preheated oven and bake for 15 minutes until the crust begins to set and brown slightly.
  6. Add Egg to Center & Final Bake: Remove the pie from the oven, create a small well in the center of the cheese filling, and carefully crack the remaining egg into this space. Return the pie to the oven and bake for another 6-8 minutes or until the egg white is fully cooked but the yolk remains slightly soft, or to your preferred doneness.
  7. Serve and Enjoy: Remove the Cheese Boat Pie from the oven, allow it to cool slightly, then slice and enjoy while warm.
