4.5 from 114 reviews

This classic canning pickles recipe guides you through preserving fresh cucumbers in a tangy, spiced vinegar brine. Perfect for creating crunchy, flavorful homemade pickles that can be stored for months. The process involves boiling a flavorful brine, packing cucumbers into sterilized jars with spices and garlic, and then processing them in a water bath canner to ensure safe preservation.

Ingredients

Scale

Brine

  • 8 cups filtered water
  • 6 cups white distilled vinegar (5% acidity)
  • 5 tablespoons sugar
  • 1/2 cup pickling salt
  • 4 teaspoons pickling spices

Seasoning for Jars

  • 8 cloves garlic
  • 2 1/2 tablespoons mustard seed
  • 8 teaspoons dill seed or 8 small sprigs fresh dill

Vegetable

  • 8 pounds pickling cucumbers (washed and trimmed)

Instructions

  1. Boil brine: In a large pot, combine 8 cups filtered water, 6 cups white distilled vinegar, 5 tablespoons sugar, 1/2 cup pickling salt, and 4 teaspoons pickling spices. Bring this mixture to a rolling boil to blend flavors and dissolve salts and sugar.
  2. Prepare jars: Thoroughly wash and sterilize 8 pint jars along with their lids and rings. Into each jar, place 1 clove garlic, about 1 teaspoon mustard seed, and 1 teaspoon dill seed (or substitute with a small sprig of fresh dill) to infuse the pickles with aromatic flavor.
  3. Pack cucumbers: Slice the pickling cucumbers into your desired shape—spears, coins, or chips. Tightly pack the cucumber slices into the prepared jars to maximize space and ensure an even pickle.
  4. Pour brine: Carefully pour the hot brine into each jar, leaving approximately 1/2-inch headspace at the top to allow for expansion during processing.
  5. Remove bubbles: Use a bubble remover or a clean knife to slide along the inside edges of each jar, releasing any trapped air bubbles. Reassess and adjust the headspace as necessary to maintain a safe margin.
  6. Process jars: Place the jars into a water bath canner ensuring they are submerged under at least 1–2 inches of water. Maintain the water temperature around 180°F and process the jars for 30 minutes to properly seal and preserve the pickles.
  7. Cool jars: Using a jar lifter, carefully remove the jars from the water bath canner. Set them upright on a towel-lined counter and allow them to cool undisturbed for at least 12 hours. After cooling, verify the seals have formed securely, then store the pickles in a cool, dark place for optimal shelf life.

Notes

  • Ensure jars and lids are properly sterilized to prevent spoilage.
  • Maintain the water bath at the correct temperature for safe preservation.
  • Adjust the processing time if you are at higher altitudes according to canning guidelines.
  • Use fresh, firm cucumbers for the best texture.
  • If fresh dill is unavailable, dill seeds work as an excellent substitute.
  • Always check seals before storing; unsealed jars should be refrigerated and consumed promptly.
