California Sushi Bites are a fresh, bite-sized appetizer featuring creamy avocado, tangy lemon juice, and a flavorful crab mixture atop crisp cucumber slices. These no-cook sushi-inspired bites are perfect for parties and light snacks.

Ingredients

Scale

Produce

  • 1 avocado
  • Juice of 1 lemon
  • 1 large cucumber, sliced into 1/4” coins
  • 3 green onions, thinly sliced (plus more for garnish)

Seafood

  • 8 oz. lump crabmeat

Condiments and Seasonings

  • Ground pepper, to taste
  • Kosher salt, to taste
  • 1/2 cup mayonnaise
  • 2 tsp. Sriracha
  • Sesame seeds, for garnish
  • Soy sauce for serving

Instructions

  1. Prepare the avocado base: In a medium bowl, squeeze the juice of one lemon over the avocado to prevent browning and season with kosher salt and ground pepper. Use a fork to mash the avocado slightly and then top each cucumber slice with some of the seasoned avocado.
  2. Make the crab mixture: In another medium bowl, combine the lump crabmeat, mayonnaise, Sriracha, and thinly sliced green onions. Season with kosher salt and ground pepper to taste, then gently fold everything together with a fork until evenly mixed.
  3. Assemble the sushi bites: Place a small scoop of the crab mixture on top of each cucumber slice already topped with avocado. Sprinkle sesame seeds and additional green onions over the top for garnish, and serve with soy sauce for dipping.

Notes

  • For a spicier kick, increase the amount of Sriracha according to your preference.
  • Use fresh lump crabmeat for best flavor; canned crab can be a substitute in a pinch.
  • The lemon juice helps keep the avocado from browning quickly, making these bites perfect to prepare shortly before serving.
  • Chill the cucumber slices before assembling for extra crispness and refreshment.
  • These bites are best eaten the same day for optimal freshness.
