Instructions

  1. Boil pasta: Bring a large pot of water to a boil. Add a couple of teaspoons of kosher salt to season the water. Cook the spaghetti until al dente, which usually takes about 8-10 minutes. During the last 2-3 minutes of cooking, add the broccoli florets to the boiling water to cook them until tender-crisp.
  2. Drain: Before draining the pasta and broccoli, scoop out 1 cup of the starchy pasta water and set it aside. Then drain the pasta and broccoli well and set aside.
  3. Sauté garlic: Heat 2 tablespoons of extra-virgin olive oil in a large skillet over medium heat. Add the thinly sliced garlic and sauté for about 1 minute or until fragrant and lightly golden, taking care not to burn it.
  4. Combine ingredients: Add the drained broccoli and pasta to the skillet with the garlic. Sprinkle in the onion powder, dried oregano, and dried thyme. Drizzle the remaining 2 tablespoons of olive oil over the pasta. If using, add the red pepper flakes, and then sprinkle the grated Parmesan cheese on top.
  5. Toss to combine: Toss everything together thoroughly, gradually adding the reserved pasta water a little at a time to create a light, flavorful sauce that coats the pasta evenly. Season with salt and freshly ground black pepper to taste.
  6. Serve: Plate the pasta, garnish with extra Parmesan cheese if desired, and serve hot immediately for the best taste and texture.
