Wonton Tostadas

Instructions

  1. Preheat Oven: Preheat your oven to 350℉ to prepare for baking the wonton wrappers.
  2. Prepare Wontons: Make an “X” slit in the center of each wonton wrapper to prevent puffing during baking. Arrange the wrappers on a foil-lined baking sheet and lightly spray the tops with avocado oil. Bake for 8-12 minutes until golden brown and crispy.
  3. Make Sesame-Nori Seasoning: While the wontons bake, pulverize the toasted sesame seeds, toasted nori squares, and MSG powder together using a mortar and pestle or a small food processor to create a fine seasoning mix.
  4. Mix Miso-Wasabi Mayo: In a bowl, combine Japanese mayo, white miso paste, and ½ tsp wasabi paste initially (adjust up to 1½ tsp depending on spice preference). Mix well until smooth.
  5. Prepare Tuna: Thinly slice the sushi-grade bluefin tuna and lay the slices side by side on parchment paper. Cover with another parchment sheet and use a rolling pin to gently thin out the slices. Cut the tuna into squares matching the size of the baked wonton tostadas for perfect coverage.
  6. Assemble Tostadas: Spread a layer of the miso-wasabi mayo onto each crispy wonton wrapper. Top with the thin tuna slices, sprinkle the sesame-nori seasoning, add lemon zest for acidity, scatter chopped chives, drizzle with olive oil, and finish with a very light sprinkle of flaky salt.
