Ingredients

Scale

Apple Topping

  • 2 large Apples (peeled, cored & sliced thinly)
  • ¼ cup Brown Sugar (50 grams)
  • 2 tbsp Unsalted Butter (Melted)

Cake Batter

  • 1 large Egg
  • ¾ cup Sugar (150 grams)
  • 1 tsp Vanilla Extract
  • ⅓ cup Sunflower Oil (75 ml)
  • ½ cup Milk (120 ml)
  • 1 tsp Baking Powder
  • ½ tsp Baking Soda
  • ⅛ tsp Salt
  • 1 tsp Ground Cinnamon
  • 1 cup Wheat Flour (120 grams)

Instructions

  1. Preheat Oven: Preheat your oven to 180 degree C (360 degree F) to get it ready for baking.
  2. Prepare Apples: Peel, core, and slice the apples thinly, then set them aside.
  3. Assemble the Apple Layer: In an 18 cm square cake pan, spoon the melted butter evenly on the base. Sprinkle the brown sugar over the butter then arrange the apple slices evenly on top of the sugar. Set aside.
  4. Prepare Cake Batter: In a blender, combine the egg, sugar, vanilla extract, sunflower oil, milk, baking powder, baking soda, salt, and ground cinnamon. Blend for 20 to 30 seconds until well mixed. Pour the batter into a bowl containing the wheat flour and gently fold until just combined, taking care not to overmix.
  5. Bake the Cake: Pour the prepared batter over the layer of apples in the cake pan, spreading evenly. Immediately place the cake pan in the preheated oven and bake for 30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and Serve: Remove the cake from the oven and let it cool for 10 minutes in the pan. Then carefully invert the cake onto a serving plate. Allow it to cool further, slice, and serve.

Notes

  • Ensure apples are sliced thinly for even cooking and caramelization.
  • Do not overmix the batter to keep the cake light and fluffy.
  • You can substitute sunflower oil with a neutral oil like canola or vegetable oil.
  • Use a toothpick to check doneness before removing from the oven.
  • Letting the cake cool before inverting helps prevent breaking or sticking.
