Cinnamon Streusel Topping:

  • 2 tablespoons granulated sugar
  • 2 tablespoons packed dark brown sugar
  • 1/2 teaspoon cinnamon
  • 2 tablespoons flour
  • 1 1/2 tablespoons butter, melted
  • 1/4 cup crushed walnuts (optional)

Zucchini Bread:

  • 1 3/4 cups flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 cup granulated sugar
  • 1/2 cup packed dark brown sugar
  • 1/2 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups shredded zucchini

Instructions

  1. Cinnamon Sugar Filling: In a small bowl, mix together granulated sugar, brown sugar, and cinnamon.
  2. Cinnamon Streusel Topping: In another small bowl, combine granulated sugar, brown sugar, flour, cinnamon, walnuts, and melted butter until crumbly.
  3. Zucchini Bread: Preheat oven to 325°F. Grease a 9×5 inch loaf pan and coat with granulated sugar. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. In a large bowl, whisk granulated sugar, brown sugar, vegetable oil, egg, vanilla, and zucchini. Add dry ingredients to wet, mix, pour half of batter into pan, sprinkle with cinnamon sugar filling, swirl, pour remaining batter, top with streusel. Bake for 55-60 minutes.

Notes

  • You can add a handful of chocolate chips for extra richness.
  • Make sure to squeeze excess moisture from the shredded zucchini before adding it to the batter.
