Chocolate Base

  • 500g (1 lb) white chocolate melts/discs (chips or chopped block)
  • 2 tbsp grapeseed oil or other neutral-flavored oil

Add-ins

  • 2 1/2 cups tightly packed regular-sized marshmallows, most cut in half
  • 1 cup unsalted pistachios, toasted
  • 1 cup glacé cherries
  • 1/2 cup unsweetened desiccated coconut (or finely shredded, not flakes)

Instructions

  1. Prepare the pan: Lightly grease a 20cm (8″) square pan with butter. Line it with baking paper (parchment paper) letting the paper overhang the edges to make it easier to lift out later.
  2. Reserve toppings: Set aside about 8 of the nicest glacé cherries for decoration. Finely chop 1 tablespoon of the pistachios to use as a sprinkle topping.
  3. Melt the chocolate: Place the white chocolate and grapeseed oil in a heatproof bowl. Microwave in 30-second increments, stirring between each, until the mixture is melted and smooth.
  4. Mix in the add-ins: Stir the marshmallows, pistachios, glacé cherries, and desiccated coconut into the melted chocolate until well combined. Pour the mixture into the prepared pan and spread it out evenly. To help it settle, firmly bang and shake the pan a few times.
  5. Add toppings: Decorate the surface with the reserved glacé cherries and sprinkle with the chopped pistachios for an attractive finish.
  6. Refrigerate and set: Chill the rocky road in the refrigerator for about 3 hours or until firm. Once set, lift it out of the pan using the parchment paper overhang and cut into squares or chunks suitable for snacking or gifting.

  • For best results, use good quality white chocolate melts or chopped chocolate blocks.
  • Grapeseed oil helps to keep the chocolate smooth and glossy but can be substituted with any neutral-flavored oil.
