Ingredients

Scale

Cheese Mixture

  • 10 oz brie (rind removed)
  • 2 oz cream cheese

Spicy Berry Jam

  • 13 oz berry jam (such as Bonne Maman Four Fruits Preserves)
  • 1 tbsp salsa macha (or chipotle adobo)
  • ½ lemon (zest only)
  • 2 tsp fresh rosemary, finely chopped
  • 1 tbsp honey

Garnishes

  • Pistachios, toasted and chopped
  • Chives, chopped, to taste
  • Flaky salt, to taste

Serving

  • Warm bread or toasted baguette slices, for serving

Instructions

  1. Whip the Cheese: In a food processor, combine the brie (with rind removed) and cream cheese. Blend until the mixture is completely smooth and creamy. Transfer this whipped cheese blend into a piping bag and refrigerate for 15–20 minutes to allow it to firm slightly, making it easier to pipe.
  2. Make the Spicy Berry Jam: In a small saucepan, combine the berry jam, salsa macha, lemon zest, fresh rosemary, and honey. Warm the mixture over medium-low heat, bringing it to a gentle simmer. Cook for 5–6 minutes, stirring occasionally, until the jam slightly thickens. Remove from heat and carefully transfer the jam back into its jar. Cool rapidly by placing the jar in a bowl of ice water or refrigerate until fully chilled. Once cooled, transfer the jam into a separate piping bag.
  3. Pipe and Plate: On your serving plate, pipe the whipped brie in smooth, even horizontal strips, leaving small gaps between each strip. Hold the piping bag at a 45° angle for neat and clean lines. Next, pipe the chilled spicy berry jam in these gaps between the cheese strips, creating a striking layered presentation.
  4. Finish and Serve: Sprinkle toasted and chopped pistachios evenly over the plated dip, followed by a scattering of chopped chives and a light dusting of flaky salt. Serve the dish immediately alongside warm bread or toasted baguette slices, perfect for dipping and spreading. Enjoy this creamy, sweet, and spicy appetizer at gatherings or as a special treat.

Notes

  • Removing the rind from the brie ensures a smooth texture perfect for whipping.
  • Chilling the whipped cheese helps it hold shape when piped for an elegant presentation.
  • If salsa macha is unavailable, chipotle in adobo sauce makes a great substitute for smoky heat.
  • Use good quality berry jam for the best flavor – Bonne Maman Four Fruits is recommended.
  • Warm bread or toasted baguette slices are ideal for serving to fully enjoy the dip’s creamy and spicy components.
  • The jam can be made in advance and refrigerated, but return to room temperature before piping for easier handling.
