Filling

- 5 spring onions, finely sliced
- 100 g shiitake mushrooms, finely chopped
- 2 garlic cloves, minced

- 2 tbsp light soy sauce
- 1 tbsp rice wine vinegar
- 1 tbsp sesame oil
- 1 tsp sugar
- 1/2 tsp ground black pepper
- 1/2 tsp MSG (optional)

- 75 ml water
Sauce and Toppings
- 1 tbsp tahini (or peanut butter)
- 1/2 tsp sugar
- 1 tbsp light soy sauce
- 1/2 lime, juiced
- 1/2 tbsp sesame oil
- 1 garlic clove, minced
- Chilli oil, for drizzling
- 10 g chives, finely sliced
- Sesame seeds, for garnish
- Prepare the filling: In a large bowl, combine the ground chicken, finely sliced spring onions, finely chopped shiitake mushrooms, minced garlic, minced ginger, light soy sauce, rice wine vinegar, sesame oil, sugar, ground black pepper, and MSG if using. Mix thoroughly until the mixture is well combined and silky in texture.
- Assemble the dumpling lasagna: In a 7″x9″, 3″ deep heatproof dish, spread about one-third of the meat mixture evenly on the base. Layer 9 dumpling wrappers over the meat with minimal overlap, similar to layering pasta sheets in lasagna. Add another layer of the meat filling, followed by another layer of dumpling wrappers, then the remaining meat filling, and finish with a final layer of dumpling wrappers. Carefully pour 75 ml of water over the layers to help steam the dish evenly.
- Steam the lasagna: Place the heatproof dish inside a steaming basket. Set this basket over a pan with 2-3 inches of boiling water. Cover with a lid and steam on high heat for 17 minutes, or until the dumpling wrappers become wrinkly and dimpled, indicating they are thoroughly cooked.
- Make the sauce: While the dumpling lasagna steams, combine tahini (or peanut butter), sugar, light soy sauce, lime juice, sesame oil, and minced garlic in a small bowl. Stir well to create a smooth and flavorful dressing.
- Serve: Once cooked, carefully remove the lasagna from the steamer to avoid burns. Drizzle the tahini dressing over the top, and garnish with chili oil, finely sliced chives, and sesame seeds. Serve immediately and enjoy this innovative and delicious dish!
