Instructions

  1. Prepare Baking Sheet: Line a medium-sized baking sheet with parchment paper to prevent sticking and for easy removal later.
  2. Slice Bananas: Peel and slice the bananas into 1/3-inch thick slices, cutting at a slight angle to help them fit together snugly. Aim for even size slices for uniform freezing.
  3. Arrange Bananas: Place the banana slices tightly together in a rectangular shape on the parchment-lined baking sheet, ensuring they touch to hold together well after freezing.
  4. Spread Peanut Butter: Evenly coat the banana slices with the creamy peanut butter using a rubber spatula. If peanut butter is too thick, warm it in the microwave for 10-15 seconds to soften. Once spread, freeze the bark for 20 minutes to set.
  5. Melt and Add Chocolate: Melt the dark chocolate chips in a microwave-safe bowl at 30-second intervals, stirring in between, until smooth. Optionally stir in coconut oil to create a silky texture. Remove the bark from the freezer and pour the melted chocolate over the peanut butter layer, spreading it evenly. Sprinkle flaky sea salt or other toppings if desired.
  6. Freeze to Set: Return the bark to the freezer for at least 90 minutes or up to 2 hours until the chocolate layer is fully hardened.
