  • 1/2 cup melted vegan butter
  • 1 cup pumpkin puree
  • 1/2 cup oat milk
  • 2 teaspoons pure vanilla extract

Maple Glaze

  • 1 1/2 cups powdered sugar
  • 4 tablespoons pure maple syrup
  • 1 teaspoon ground cinnamon
  • 24 tablespoons oat milk

Instructions

  1. Preheat and prepare: Preheat your oven to 350°F (175°C) and generously spray a donut pan with non-stick spray to prevent sticking.
  2. Mix dry ingredients: In a large bowl, whisk together the all purpose flour, light brown sugar, baking powder, pumpkin pie spice, and salt until combined and evenly distributed.
  3. Add wet ingredients: Pour in the melted vegan butter, pumpkin puree, oat milk, and vanilla extract. Stir thoroughly with a large spoon until the batter is smooth and everything is well incorporated.
  4. Fill the donut pan: Spoon the batter into each cavity of the donut pan, filling them to the top. For a cleaner process, you can use a piping bag to fill the molds.
  5. Bake the donuts: Place the pan in the oven and bake for 10 to 12 minutes. The donuts are ready when they are lightly browned on the edges and spring back when touched. Baking time may vary based on your donut pan size.
  6. Prepare the maple glaze: In a medium bowl, whisk together powdered sugar, maple syrup, cinnamon, and 2 tablespoons of oat milk. If the glaze is too thick, add oat milk one teaspoon at a time until it reaches a runny consistency similar to corn syrup.
