Ingredients

Scale

Cookie Base

  • 1/2 cup (111g) salted butter
  • 1/2 cup (115g) granulated sugar
  • 1 tsp vanilla extract
  • 1 egg white
  • 1 1/2 cups (228g) all-purpose flour
  • 1 tsp baking powder

Caramel Topping

  • 20 caramels, unwrapped
  • 1 tbsp milk

Chocolate Topping

  • 2 cups (400g) milk chocolate chips

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) to get it ready for baking the cookie cups.
  2. Cream butter and sugar: In a mixing bowl, beat together the salted butter and granulated sugar until light and fluffy, creating a smooth base for the dough.
  3. Add egg white and vanilla: Mix in the egg white and vanilla extract thoroughly to combine all wet ingredients.
  4. Combine dry ingredients: Stir in the all-purpose flour and baking powder until the dough forms a consistent texture.
  5. Roll and cut dough: Roll the dough to about 1/4 to 1/2 inch thick, then use a round cookie cutter to cut out circles. Place these circles onto an ungreased baking pan.
  6. Bake the cookies: Bake at 350°F (175°C) for 6-8 minutes until the cookies look puffy and are no longer glossy. Remove from oven and transfer to a wire rack to cool completely.
  7. Prepare caramel topping: Microwave the unwrapped caramels with the milk for 1 minute, stirring after 30 seconds, until the mixture is smooth and creamy.
  8. Add caramel to cookies: Spoon a few teaspoons of the warm caramel onto each cooled cookie, spreading it close to the edges, then chill in the fridge for 10-15 minutes until firm.
  9. Melt the chocolate: Melt the milk chocolate chips in 30-second intervals, stirring well after each interval until fully melted and smooth.
  10. Top with chocolate: Spread a small amount of melted chocolate over each caramel-topped cookie and let it cool completely to set before serving.

Notes

  • Ensure the cookies are completely cooled before adding the caramel so the caramel does not melt too much.
  • Wrapping the caramels individually helps prevent sticking and ensures easier melting.
  • Use a wire rack for cooling so air circulates and cookies cool evenly.
  • You can substitute milk chocolate chips with dark or white chocolate according to preference.
  • Store Twix Cookie Cups in an airtight container in the refrigerator for up to 5 days.
