Cookie Dough:
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup light brown sugar, gently packed
- ½ cup creamy peanut butter
- 1 large egg
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour (stirred, spooned, and leveled)
- 1 tsp baking soda
- ½ tsp salt
- Cream the Butter and Sugars: In the bowl of a stand mixer with the paddle attachment, cream together the butter, granulated sugar, and brown sugar.
- Add Peanut Butter, Egg, and Vanilla: Mix in the peanut butter, egg, and vanilla extract, scraping down the sides of the bowl as needed.
