Ingredients

Scale

Cookie Dough:

  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup light brown sugar, gently packed
  • ½ cup creamy peanut butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour (stirred, spooned, and leveled)
  • 1 tsp baking soda
  • ½ tsp salt

Instructions

  1. Cream the Butter and Sugars: In the bowl of a stand mixer with the paddle attachment, cream together the butter, granulated sugar, and brown sugar.
  2. Add Peanut Butter, Egg, and Vanilla: Mix in the peanut butter, egg, and vanilla extract, scraping down the sides of the bowl as needed.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Add this mixture to the butter mixture and mix until just combined.
  4. Bake the Cookies: Scoop the dough onto silicone-lined baking sheets. Bake at 350˚F for 10 to 12 minutes or until the edges are set. Let the cookies cool slightly on the baking sheet before transferring to a wire rack to cool completely. Store in an airtight container.

Notes

  • You can add chocolate chips or chopped nuts to the dough for extra flavor and texture.
  • Make sure not to overbake the cookies to keep them soft and chewy.
