Teriyaki Sauce

  • 3 tbsp light soy sauce
  • 3 garlic cloves (minced)

  • 1/2 tbsp brown sugar
  • 1 tbsp rice wine vinegar

Spicy Miso Sauce

  • 1 tbsp butter
  • 2 garlic cloves (minced)
  • 1/2 tbsp miso paste
  • 300 ml single cream
  • 1 tbsp sriracha (adjust to taste for spice)
  • 1 tsp light soy sauce
  • 1/2 tsp brown sugar

To Serve

  • 2 portions Thai jasmine rice (cooked and hot)
  • 10 g chives (finely sliced)
  • Black sesame seeds (to garnish)
  • 4 tsp chili oil (optional)

Instructions

  1. Prepare the Meatball Mixture: In a large bowl, combine the ground pork, ground beef, breadcrumbs, egg, a generous pinch of flaky salt, and freshly ground black pepper. Mix thoroughly until well combined, then shape into approximately 16 meatballs.
  2. Fry the Meatballs: Heat 1 tablespoon of vegetable oil in a large frying pan or skillet over medium heat. Once hot, add the meatballs and fry for about 3 minutes on each side until they develop a golden brown crust. The meatballs will not be fully cooked inside at this point.
  3. Make Teriyaki Sauce & Simmer Meatballs: In a bowl, mix together light soy sauce, minced garlic, minced ginger, brown sugar, and rice wine vinegar to create the teriyaki sauce. Pour this sauce over the browned meatballs in the pan. Stir gently to coat the meatballs evenly. Reduce the heat to low to avoid burning the sauce, cover with a lid, and let the meatballs cook for an additional 10 minutes or until cooked through.
  4. Prepare the Spicy Miso Sauce: While the meatballs cook, melt the butter in a separate pan over medium heat. Add the minced garlic and miso paste, stirring until a paste forms. Then, pour in the single cream, sriracha, soy sauce, and brown sugar. Stir well and simmer on low heat, allowing the flavors to meld and the sauce to thicken slightly. Taste and adjust seasoning as desired.
  5. Serve: Portion the hot Thai jasmine rice into bowls. Top with the teriyaki meatballs, generously drizzle with the spicy miso sauce, sprinkle with finely sliced chives and black sesame seeds. Optionally, add a drizzle of chili oil for extra heat. Enjoy your flavorful and comforting meal!
