Instructions

  1. Preheat Oven and Prepare Muffin Pan: Preheat your oven to 450ºF (232ºC). Thoroughly spray the cups of a muffin pan with cooking spray to prevent sticking.
  2. Arrange Tater Tots: For a mini-sized muffin pan, place 2-3 tater tots in each cup; for a regular-sized muffin pan, place 4-5 tots per cup, evenly distributing them.
  3. Bake Initial Layer: Place the muffin pan on the bottom rack of the oven and bake for 10 minutes. This begins cooking the tots and helps them soften just enough to shape later.
  4. Shape the Potato Cups: Remove the pan from the oven. Spray the bottom of a shot glass or small juice glass with cooking spray. Press and twist the glass into each muffin cup, pushing the tater tots toward the sides and up the walls of the muffin cup to create a cup shape with a small gap between the glass and the pan edge. This makes a crispy potato cup shell.
  5. Bake Until Golden: Return the shaped cups to the oven and bake an additional 15 minutes, or until the potato cups are deeply golden brown and crisp.
  6. Add Cheese and Melt: Spoon about 1 tablespoon of shredded cheddar cheese into each potato cup. Return to the oven and bake for another 4-5 minutes, or until the cheese is fully melted and bubbly.
  7. Cool and Garnish: Remove the pans from the oven and transfer the tater tot cups to a serving platter. Allow them to cool for about 5 minutes. Then top each cup with a dollop of sour cream, sprinkle crumbled bacon over the top, and finish with sliced green onions.
