Zucchini Boats:

  • 4 medium zucchini, halved lengthwise

  • 1/2 pound ground beef or turkey
  • 1 tomato, diced
  • 1/2 cup cooked rice or breadcrumbs
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup mozzarella cheese, shredded

Instructions

  1. Prepare Zucchini Boats: Preheat oven to 375°F (190°C). Scoop out zucchini insides, leaving a 1/4 inch rim. Chop scooped flesh.
  2. Cook Filling: Sauté onion, garlic in olive oil. Add meat and zucchini flesh. Cook until browned.
  3. Combine Ingredients: Add tomatoes, rice/breadcrumbs, seasoning, salt, and pepper. Cook until combined.
  4. Stuff Zucchini: Fill zucchini boats with mixture.
  5. Add Cheese: Top with Parmesan and mozzarella.
  6. Bake: Bake for 25-30 minutes until tender and cheese melts.
  7. Serve: Cool slightly, garnish, and serve.
