These Stuffed Dates with Peanut Butter & Chocolate are a delicious and easy-to-make treat combining the natural sweetness of medjool dates with creamy peanut butter and rich chocolate. Perfect for a quick snack or a healthy dessert, they offer a delightful combination of flavors with a hint of sea salt for balance.

Ingredients

Scale

Dates and Filling

  • 20 medjool dates
  • ⅓ cup peanut butter (80g) – may need slightly more if dates are large

Chocolate Coating

  • ¼ cup coconut oil (50g)
  • ¼ cup cacao or cocoa powder (15g)
  • ½ cup dark chocolate or chocolate chips (70g)
  • Sea salt flakes, for sprinkling

Instructions

  1. Prepare the baking tray: Line a large baking tray with parchment paper to prevent the dates from sticking during the chocolate coating process.
  2. Prepare the dates: Slice open each medjool date lengthwise and carefully remove the pit. Place the pitted dates on the lined baking tray.
  3. Fill the dates: Spoon just under 1 teaspoon of peanut butter into the hollow of each date, ensuring they are evenly filled without overflowing.
  4. Melt and mix the chocolate: In a small bowl, add the coconut oil and microwave for 30 seconds until melted, or melt it in a double boiler. Stir the cacao or cocoa powder into the melted coconut oil until smoothly combined. Alternatively, if using pre-made chocolate, break it into pieces and microwave for 30 seconds until melted.
  5. Coat the dates: Allow the melted chocolate mixture to cool slightly before drizzling it over the filled dates. For a more decadent treat, you can dip the dates into the chocolate mixture directly. Optionally, sprinkle sea salt flakes on top to enhance the flavor.
  6. Set the chocolate: Place the baking tray with the chocolate-coated dates in the refrigerator and chill for about 20 minutes or until the chocolate has hardened completely.

Notes

  • Use medjool dates for their larger size and natural sweetness; smaller dates may require less peanut butter.
  • Feel free to substitute peanut butter with any nut or seed butter if preferred or for dietary restrictions.
  • If you prefer a sweeter chocolate coating, you can add a small amount of sweetener to the cocoa mixture before drizzling.
  • Store finished dates in an airtight container in the refrigerator for up to one week.
  • This recipe works well as a quick healthy snack or a natural energy boost before workouts.
