  • 1 and ½ pounds fresh strawberries (hulled and sliced)
  • ¼ cup granulated sugar

For the Shortcakes:

  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup cold unsalted butter (cut into small pieces)
  • ⅔ cup whole milk
  • 1 teaspoon vanilla extract

For the Whipped Cream:

  • 1 cup heavy whipping cream (cold)
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Slice the strawberries: Slice the strawberries and place them in a large bowl.
  2. Sweeten the strawberries: Sprinkle ¼ cup granulated sugar over the strawberries. Stir gently and set aside for at least 30 minutes.
  3. Preheat the oven: Preheat the oven to 425°F.
  4. Prepare the shortcakes: In a large mixing bowl, combine the flour, ¼ cup granulated sugar, baking powder, and salt. Add the cold butter pieces and blend until crumbly. Pour in the milk and vanilla extract. Stir just until combined.
  5. Bake the shortcakes: Drop spoonfuls of dough onto a baking sheet. Bake for 12 to 15 minutes until golden brown. Let cool.
