Instructions

  1. Cook the Strawberries: Place the halved strawberries in a medium pot over medium heat and cook down for 5-10 minutes, stirring occasionally. The strawberries should release a lot of their natural liquid and become soft, creating a juicy base for the jam.
  2. Add Sweetener and Lemon: Remove the pot from the heat and stir in pure maple syrup and fresh squeezed lemon juice. These add sweetness and brightness to balance the fruity flavors.
  3. Incorporate Chia Seeds: Add the chia seeds to the mixture and stir thoroughly to ensure they are evenly distributed. The chia seeds will absorb the liquid and help the mixture thicken into a jam-like consistency.
  4. Let it Rest and Thicken: Allow the mixture to rest for 5-10 minutes off the heat. During this period, the chia seeds will swell and thicken the jam naturally. Once thickened, serve immediately or transfer to a jar and refrigerate until ready to use.
