  • 8 tbsp (1 stick) unsalted butter, melted
  • ¾ cup granulated sugar
  • 2 tbsp light brown sugar
  • 2 large eggs
  • ¼ tsp salt
  • 1 ⅔ cups all-purpose flour

For the Toffee Sauce:

  • 8 tbsp (1 stick) unsalted butter, melted
  • 1 cup heavy cream
  • 1 cup + 2 tbsp brown sugar
  • 2 tsp vanilla extract

Instructions

  1. Prepare the Date Cake: In a heatproof bowl, pour boiling water over the chopped dates and stir in baking soda. Cover and let sit for 30 minutes.
  2. Preheat and Prepare: Preheat oven to 350°F. Butter a 9×13 baking pan.
  3. Blend Dates: Blend the softened date mixture until smooth.
  4. Mix Batter: In a large bowl, mix melted butter, sugars, eggs, and salt. Stir in flour, then fold in the date puree.
  5. Bake: Pour batter into the pan and bake for 25-30 minutes (until a toothpick comes out clean).
  6. Make Toffee Sauce: In a saucepan, combine butter, cream, sugar, and vanilla. Simmer and whisk for 10 minutes until thickened.
