  • 24 ounces marinara sauce (1 jar)

Instructions

  1. Preheat Oven: Preheat your oven to 350˚F to prepare for baking the casserole.
  2. Cook Ravioli: Boil the cheese ravioli according to package instructions until al dente, typically a minute or two less than recommended to avoid overcooking. Drain and set aside.
  3. Cook Onions: In a large skillet, heat the olive oil over medium-low heat. Add the diced onions and cook, stirring regularly, until they begin to caramelize, about 6-8 minutes.
  4. Add Garlic and Spinach: Stir minced garlic into the caramelized onions, then add the chopped spinach. Cook, stirring frequently, until the spinach is just wilted, approximately 3-4 minutes. Remove from heat.
  5. Assemble Casserole: Spread about 1/2 cup of marinara sauce at the bottom of a 2-quart casserole dish. Layer half of the cooked ravioli on top, then spread half of the remaining marinara sauce, followed by half of the spinach and onion mixture, and half of the shredded mozzarella cheese. Repeat the layering with the remaining ravioli, sauce, spinach mixture, and cheese.
  6. Bake: Place the assembled casserole in the preheated oven and bake for 20-30 minutes, or until the cheese is melted and bubbly and the sides begin to bubble.
