These S’mores Brownie Bites are a fun and delicious treat combining the classic flavors of s’mores with rich, fudgy brownies. Featuring a graham cracker crust, gooey toasted marshmallows, and melted Hershey’s chocolate on top, these mini bites are perfect for parties, dessert platters, or anytime you want a nostalgic sweet treat in bite-sized form.

Graham Crust

  • 1 cup graham cracker crumbs
  • 5 tbsp melted butter
  • 1 tbsp sugar

Brownie Batter

  • 1 (18 oz) box brownie mix (prepared according to box instructions)

Topping

  • 12 large marshmallows
  • 2 full size Hershey’s chocolate bars

Instructions

  1. Prepare the Oven and Pan: Preheat your oven to 350 degrees F (175 degrees C) and grease a mini muffin tin thoroughly with non-stick cooking spray to ensure easy removal of the brownie bites later.
  2. Make Graham Cracker Crust: In a medium mixing bowl, combine 1 cup graham cracker crumbs, 5 tablespoons melted butter, and 1 tablespoon sugar. Mix until the crumbs are evenly moistened.
  3. Form Crust in Muffin Tin: Spoon roughly 1 tablespoon of the graham cracker mixture into the bottom of each muffin tin cavity. Use the bottom of a shot glass or similar object to firmly press the crumbs into compact mini crusts that will hold their shape.
  4. Prepare Brownie Batter and Bake: Prepare the brownie batter according to the instructions on the box. Then, evenly divide the batter among the muffin cups, filling each over the graham crust. Bake the brownies at 350°F for 20 minutes, or until a toothpick inserted comes out with moist crumbs. Remove from oven and set aside to cool slightly.
  5. Toast Marshmallows Under Broiler: Increase the oven temperature to broil. Cut each large marshmallow in half horizontally. Place one marshmallow half, cut side down, on top of each brownie bite. Place under the oven broiler for about 30 seconds, watching carefully for the marshmallows to toast golden brown without burning.
  6. Add Chocolate Topping: Immediately after removing from the broiler, place a square of Hershey’s chocolate on top of each toasted marshmallow so it begins to melt. Allow the brownie bites to cool before gently removing them from the muffin tin and serving.
