Main Ingredients:

  • 1 pound boneless, skinless chicken breasts
  • 1 head broccoli, florets roughly chopped
  • 12 carrots, julienned

  • 1 (4 oz) package sliced mushrooms
  • 1/2 pound spaghetti, cooked separately

  2. Cook the Chicken: Pour 1/3 of the sauce into a greased slow cooker. Add the chicken, cover, and cook on HIGH for 3-4 hours or LOW for 6-8 hours.
  3. Add Vegetables: Stir in another 1/3 of the sauce along with broccoli, carrots, red bell pepper, and mushrooms. Cover and cook on HIGH for 1 hour.
  4. Finish the Dish: Shred the cooked chicken, then stir in the remaining sauce and cooked pasta. Adjust seasoning if needed.
  5. Serve: Dish out the Slow Cooker Lo Mein, garnish with sesame seeds, green onions, and cilantro. Enjoy!

Notes

  • You can customize the vegetables to your preference, such as adding snap peas or baby corn.
  • To make it vegetarian, substitute tofu for chicken and use vegetable broth.
  • For a gluten-free option, use tamari or coconut aminos instead of soy sauce.
