Base
- 6 cups Rice Krispies or alternative crisp rice cereal
- 4 tablespoons butter
- 5 cups miniature marshmallows
Toppings
- 3 cups semi-sweet chocolate chips
- 1½ cups coconut flakes
- ¾ cup caramel sauce (homemade or store-bought)
- Melt Butter and Marshmallows: In a large saucepan over medium heat, melt 4 tablespoons of butter. Once melted, add 5 cups of miniature marshmallows and stir continuously until completely melted and smooth.
- Combine with Rice Krispies: Remove the saucepan from heat. Quickly add 6 cups of Rice Krispies cereal, stirring gently to coat the cereal evenly with the marshmallow mixture.
- Press into Pan: Grease a 9 x 13 inch pan well. Transfer the mixture into the pan and press down firmly and evenly. Allow it to cool completely, then cut into 24 bars.
- Melt Chocolate: Place 3 cups of semi-sweet chocolate chips into a deep microwave-safe bowl. Microwave in 10-second intervals, stirring in between, until fully melted and smooth.
- Dip in Chocolate: Dip the bottom one-third of each Rice Krispie treat bar into the melted chocolate. Place them upside down on parchment paper or a wire rack and let the chocolate dry completely.
- Caramel and Coconut Topping: In a small bowl, mix ¾ cup caramel sauce with 1½ cups coconut flakes until combined.
- Add Toppings and Drizzle: On the top of each treat, place a small spoonful of the caramel-coconut mixture. Drizzle with any remaining melted chocolate. Allow everything to set fully before serving.
- Serve Fresh: These treats are best enjoyed fresh on the same day for optimal texture and flavor.
Notes
- Use store-bought caramel sauce for convenience or homemade for better flavor.
- Press the mixture firmly into the pan to ensure treats hold together well.
- To toast coconut flakes, spread them on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, stirring occasionally until golden brown.
- Store treats in an airtight container at room temperature for up to 2 days.
- Substitute semi-sweet chocolate chips with dark chocolate for a richer taste.
