For the Cabbage Steaks
- 1 small head of green cabbage (about 10 oz.)
- 3 Tbsp. neutral oil
- 2 1/2 tsp. kosher salt, divided
- Freshly ground black pepper
For the Patties and Toppings
- 1 lb. (80% lean) ground beef
- 4 slices American cheese
- Ketchup, for serving
- Mustard, for serving
- Cooked crumbled bacon, for serving
- Dill pickle chips, for serving
- Finely chopped red onions, for serving
- Preheat and prepare cabbage: Arrange a rack in the center of the oven and preheat to 425°F. On a cutting board, lay the cabbage on its side and cut 1 inch off the top (reserve for another use). Slice the remaining cabbage into four 1/2-inch-thick steaks, discarding the root end.
- Season cabbage steaks: Place the cabbage steaks on a baking sheet. Brush both sides with neutral oil, then season all over with 1 1/2 teaspoons kosher salt and several grinds of black pepper.
- Roast cabbage: Roast the cabbage steaks in the oven for 20 to 25 minutes, until they become tender.
- Prepare beef patties: About 5 minutes before the cabbage steaks finish cooking, shape the ground beef into four large, flat patties approximately 4 inches in diameter. Season all sides with the remaining 1 teaspoon kosher salt and a few grinds of black pepper.
- Cook burgers on cabbage: Place a beef patty on top of each roasted cabbage steak on the baking sheet. Return to the oven and bake for about 8 minutes, or until the burgers reach your desired doneness (medium-rare recommended).
- Melt cheese: Place a slice of American cheese on each patty and bake for an additional minute to melt the cheese.
- Serve: Remove from oven and serve the cabbage burgers topped with ketchup, mustard, cooked crumbled bacon, dill pickle chips, and finely chopped red onions according to your preference.
