  • 1 medium yellow onion, diced

  • 3 carrots, peeled and diced
  • 4 cups red cabbage, shredded
  • 1 14.5 oz can diced tomatoes
  • 4 cups chicken stock or vegetable stock
  • ½ cup brown sugar
  • ½ cup red wine vinegar or apple cider vinegar
  • 2 teaspoons salt
  • ½ cup raisins

Instructions

  1. Caramelize the Onions: In a large soup pot over medium heat, cook the diced onion with olive oil and ¼ teaspoon salt for about 10 minutes.
  2. Add Carrots: Add the diced carrots and cook for 3 minutes, scraping up any browned bits.
  3. Incorporate Cabbage: Mix in the shredded red cabbage with another ¼ teaspoon salt and cook until it brightens in color.
  4. Combine Ingredients: Stir in the diced tomatoes, stock, brown sugar, vinegar, remaining salt, and raisins. Reduce heat to medium-low.
  5. Simmer: Let the soup simmer for 45 minutes. Adjust seasoning with salt and pepper before serving.
