Filling:

  • 2 teaspoon lemon juice
  • 2 cups rhubarb plants
  • 5 cups strawberries
  • 1/4 cup orange juice
  • orange zest (of 1/2 orange)
  • 1 tablespoon unsalted butter
  • 1 cup white sugar
  • 2 tablespoon dark brown sugar
  • 3/4 cup corn starch

Pie Crust:

  • 2 pie crusts (one for the top and bottom)

Serving:

  • 1/4 cup ice cream (estimate per slice, as desired)
  • 1/4 cup whipped cream (estimate per slice, as desired)

Instructions

  1. Filling: In a large bowl, wash and cut the strawberries and rhubarb into bite sizes. Squeeze lemon juice over them to keep the strawberries crisp. In a cooking pot, combine butter, strawberries, rhubarb, white sugar, and brown sugar. Add orange juice and zest. Simmer until sugar melts. Cook until liquid reduces. Mix cornstarch with some liquid to form a paste. Add to pot, stir until thickened. Set aside.
  2. Pie Crust: Butter the pan and line with one pie crust. Fill with the prepared filling. Cover with the second crust, seal edges, and create vents. Make an egg wash with 1 egg and water, brush over the crust, sprinkle sugar. Bake at 375°F for 20 minutes, then reduce to 350°F and bake until golden brown.
