Raspberry Puree
- 1 cup raspberries
- 2 tablespoons sugar (or honey)
- 1 tablespoon water
Hot Chocolate
- 3 cups milk
- 3/4 cup white chocolate chips
- 1 teaspoon vanilla extract
- 2 drops natural red food coloring (optional)

- Cook the berries: In a small saucepan, combine the raspberries, sugar or honey, and water. Cook over medium heat for about 10 minutes, stirring frequently, until the berries start breaking down.
- Puree the berries: Remove from heat, transfer the cooked berries to a blender, and blend until smooth.
- Strain the puree: Pass the raspberry puree through a fine sieve to remove seeds, pushing with the back of a spoon as needed for smoothness.
- Heat the milk: In a medium saucepan over low heat, gently bring the milk to a simmer while whisking constantly. Remove before it boils.
- Melt the white chocolate: Add the white chocolate chips to the hot milk and stir until fully melted and smooth. If needed, place back on low heat to help dissolve.
- Combine flavors: Stir in the raspberry puree and vanilla extract until well incorporated. For a deeper red color, add 1 to 2 drops of natural red food coloring and mix.
