Instructions

  1. Cook the berries: In a small saucepan, combine the raspberries, sugar or honey, and water. Cook over medium heat for about 10 minutes, stirring frequently, until the berries start breaking down.
  2. Puree the berries: Remove from heat, transfer the cooked berries to a blender, and blend until smooth.
  3. Strain the puree: Pass the raspberry puree through a fine sieve to remove seeds, pushing with the back of a spoon as needed for smoothness.
  4. Heat the milk: In a medium saucepan over low heat, gently bring the milk to a simmer while whisking constantly. Remove before it boils.
  5. Melt the white chocolate: Add the white chocolate chips to the hot milk and stir until fully melted and smooth. If needed, place back on low heat to help dissolve.
  6. Combine flavors: Stir in the raspberry puree and vanilla extract until well incorporated. For a deeper red color, add 1 to 2 drops of natural red food coloring and mix.
  7. Serve: Pour the raspberry white hot chocolate into four mugs and top each with whipped cream.
