Instructions

  1. Prepare the Raspberry Jam: If using frozen raspberries, thaw them by letting them sit at room temperature for 1-2 hours or microwaving slowly, then drain any excess liquid. Mash the raspberries in a bowl with a fork, then stir in the chia seeds. If using fresh raspberries, wash them under cool water and dry thoroughly, then mash and mix with chia seeds. Let the mixture sit for 15 minutes to thicken into a jam-like consistency.
  2. Form the Bites and Freeze: Using a tablespoon, drop small mounds of the raspberry chia jam onto a parchment-lined tray. Place the tray in the freezer and freeze the mounds until completely firm, about 15 minutes.
  3. Melt the Chocolate: Slowly melt the dark chocolate chips either over low heat on the stove, stirring constantly to prevent seizing, or in the microwave in 20-30 second intervals, stirring in between. Ensure the chocolate is smooth and fully melted before proceeding.
  4. Dip the Raspberry Bites: Using a fork, dip each frozen raspberry chia bite into the melted chocolate, then gently tap the fork on the side of the bowl to remove excess chocolate. Quickly sprinkle with a pinch of sea salt before the chocolate sets.
