- Preheat and Prepare Chicken: Preheat your oven to 190C (375F). Slice the chicken breasts in half lengthwise to create four thinner pieces. Drizzle one tablespoon of vegetable oil into the base of a casserole dish or oven-proof pan, then arrange the chicken pieces evenly in the dish.
- Add Broccoli: Arrange broccoli florets around and between the chicken pieces in the dish to ensure even cooking and flavor distribution.
- Season: Sprinkle the paprika and mixed herbs over the chicken and broccoli. Add a small pinch of salt and a generous grind of black pepper to enhance the flavors.
- Pour Cream of Chicken Soup: Pour the 400g of cream of chicken soup evenly over the chicken and broccoli. If you prefer a looser sauce, you may add 50ml of chicken stock and gently mix to combine.
- Add Cheese and Bake: Sprinkle the grated mozzarella cheese over the entire dish, covering the chicken and vegetables. Cover the dish with kitchen foil. Bake in the preheated oven for 20 minutes.
