Ingredients

Scale

Main Ingredients

  • Two 15 ounce cans pumpkin
  • 3 eggs
  • One 12 ounce can evaporated milk
  • 3/4 cup granulated sugar
  • 1 teaspoon pumpkin pie spice

Topping

  • 1 box spice cake mix, 15-16 ounce size (or yellow cake mix with 2 additional teaspoons pumpkin pie spice)
  • 11/2 sticks butter, sliced into thin pats (12 tablespoons)
  • 1/2 cup chopped pecans

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Grease the bottom of a 9” x 13” baking pan thoroughly to ensure the cobbler doesn’t stick.
  2. Mix pumpkin base: In a large mixing bowl, combine the canned pumpkin, eggs, granulated sugar, pumpkin pie spice, and evaporated milk. Stir well until all ingredients are fully incorporated and smooth.
  3. Pour mixture into pan: Pour the pumpkin mixture evenly into the prepared baking pan, spreading it into an even layer.
  4. Add cake mix topping: Sprinkle the dry spice cake mix evenly over the top of the pumpkin layer, covering the entire surface.
  5. Top with butter: Distribute the slices of butter evenly over the dry cake mix to aid in creating a moist and flavorful crust as it bakes.
  6. Add chopped pecans: Sprinkle the chopped pecans evenly over the top of the buttered cake mix to add a crunchy texture and nutty flavor.
  7. Bake the cobbler: Place the pan in the preheated oven and bake for 40 to 45 minutes. The cobbler is ready when the cake topping is golden brown and a toothpick inserted in the center comes out mostly clean.
  8. Cool and serve: Remove the cobbler from the oven and allow it to cool before serving. This helps the cobbler set slightly and enhances the flavors.

Notes

  • Use a spice cake mix for a richer flavor; if using yellow cake mix, add 2 teaspoons of pumpkin pie spice to mimic the spice cake flavor.
  • Make sure to slice the butter thinly to allow even melting over the cake mix.
  • Let the cobbler cool for at least 15 minutes before serving to enhance texture and flavor.
  • You can substitute chopped walnuts for pecans if preferred.
  • This dessert pairs wonderfully with whipped cream or vanilla ice cream.
