Ingredients

Scale

For the Dough and Base

  • 1/2 pound ball of pizza dough
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon fresh thyme leaves
  • 2 cloves garlic, chopped
  • Chili flakes, to taste
  • 2 teaspoons honey, divided
  • 2 teaspoons fig preserves

Cheeses

  • 1/2 cup shredded mozzarella cheese
  • 3/4 cup shredded gouda cheese
  • 3/4 cup shredded fontina cheese

Toppings

  • 3 ounces prosciutto
  • 1 peach, thinly sliced
  • 1 tablespoon balsamic vinegar
  • Fresh basil leaves, generous handfuls for topping

Instructions

  1. Preheat Oven: Preheat your oven to 450°F (232°C) to ensure it is hot enough for a crispy, golden crust.
  2. Prepare Dough: On a lightly floured surface, roll or push out the pizza dough until it forms a thin 10-12 inch circle. Transfer the dough onto a baking sheet.
  3. Season the Crust: Lightly brush the surface of the dough with extra virgin olive oil. Sprinkle fresh thyme leaves, chopped garlic, and chili flakes evenly over the dough. Spread 1 teaspoon of honey and the fig preserves gently around the surface, adding a subtle sweetness and depth of flavor.
  4. Add Cheeses: Evenly distribute the shredded mozzarella, gouda, and fontina cheeses on top of the dough, covering the surface as a flavorful base.
  5. Prepare and Arrange Toppings: In a bowl, toss the thinly sliced peaches with the remaining 1 teaspoon of honey and balsamic vinegar to enhance their sweetness and add a tangy note. Arrange the peach slices evenly over the cheese layer. Tear or arrange the prosciutto slices on top of the peaches.
  6. Bake: Place the pizza in the preheated oven and bake for 10-15 minutes, or until the crust is golden brown and the cheese is melted and bubbling.
  7. Finish with Fresh Basil: Remove the pizza from the oven and scatter two big handfuls of fresh basil leaves over the top while still hot. Slice and serve immediately to enjoy the fresh herb aroma and vibrant flavors.

Notes

  • For the best flavor, use ripe but firm peaches to prevent sogginess.
  • If you don’t have fig preserves, a small amount of apricot jam can be a good substitute.
  • You can add a little arugula on top instead of basil for a peppery finish.
  • Adjust chili flakes to your preferred spice level or omit for a milder pizza.
  • To get a crispier crust, use a pizza stone preheated in the oven instead of a baking sheet.
  • Store leftovers in the refrigerator and reheat in a hot oven to keep crust crisp.
