Ingredients:
- 2 sticks salted butter (softened)
- 1 1/4 cup powdered sugar, divided
- 2 tsp vanilla
- 1 3/4 cups all-purpose flour
- 1 3.4 oz package pistachio instant pudding mix (dry)
- Cream Butter: In a large bowl, with a stand or hand mixer, cream butter until smooth. Add in 1/2 cup powdered sugar and beat until fluffy. Add vanilla and mix until combined.
- Combine Ingredients: In another bowl, combine flour and dry pudding mix. Gradually add flour mixture into butter mixture until it forms a dough.
- Chill Dough: Pour dough onto wax paper, form a ball, wrap, and refrigerate for 1 hour.
- Shape Cookies: Remove from refrigerator and use a teaspoon measuring spoon to make cookie balls. Press each ball slightly with the back of the spoon.
- Bake: Place on a parchment-lined baking sheet and bake in a preheated 350-degree oven for 6 to 9 minutes. Remove and let cool for 3 to 5 minutes on the baking sheet.
- Coat Cookies: Roll cookies in the remaining powdered sugar and place on a wire rack to cool completely. Store in an airtight container.
