Ingredients

Scale

For the Marinade:

  • 1 ½ pounds flank steak
  • ¼ cup extra virgin olive oil
  • ¼ cup honey
  • 2 cloves garlic (grated or minced)
  • 2 Tablespoons red wine vinegar
  • 2 Tablespoons soy sauce
  • ½ teaspoon black pepper

For the Arugula Pesto:

  • 2 cups packed arugula
  • ¼ cup packed basil
  • 1 cup extra-virgin olive oil
  • 1 cup finely grated parmesan
  • 1/3 cup pine nuts
  • 1 Tablespoon lemon zest
  • 1 clove garlic (crushed)
  • 1 teaspoon kosher salt
  • Freshly ground black pepper (to taste)

For Serving:

  • 4 ears corn
  • 2 balls burrata cheese (torn into bite-sized pieces)
  • Salt and pepper (to taste)

Instructions

  1. Marinate the Steak: Whisk together the marinade ingredients and pour over the flank steak. Marinate for at least 30 minutes.
  2. Preheat the Grill: Preheat the grill to high heat.
  3. Make the Pesto: In a food processor, blend arugula, basil, olive oil, parmesan, pine nuts, lemon zest, garlic, and salt until finely chopped. Season with pepper.
  4. Grill the Steak and Corn: Cook the steak for 3-5 minutes per side for medium rare. Grill the corn until charred and tender.
  5. Rest and Slice: Let the steak rest for 5 minutes, then slice against the grain. Cut the corn kernels off the cobs.
  6. Plate and Serve: Plate the sliced steak with burrata and grilled corn. Top with arugula pesto. Enjoy!

Notes

  • For a richer pesto, you can add more olive oil or adjust the consistency to your liking.
  • Feel free to adjust the seasoning of the pesto with more salt, pepper, or lemon juice to suit your taste preferences.
  • Make extra pesto to use as a delicious spread or sauce for other dishes.
