French Toast

  • 3/4 cup packed brown sugar
  • 1/2 cup butter
  • 2 Tbsp. corn syrup
  • 1 loaf French Bread, sliced
  • 2 15 ounce cans Libby’s Sliced Peaches
  • 1 cup milk
  • 1 cup half & half
  • 6 eggs
  • 1 tsp. cinnamon
  • 1/2 tsp. vanilla extract

Streusel Topping

  • 6 Tbsp. butter, softened
  • 3/4 cup packed brown sugar
  • 2/3 cup flour
  • 1/2 tsp. cinnamon

Instructions

  1. Prepare Brown Sugar Mixture: Combine brown sugar, butter, and corn syrup in a small saucepan. Heat over medium until blended, stirring frequently. Pour into a greased 9×13 inch pan.
  2. Layer French Toast: Arrange bread slices over brown sugar mixture in the pan. Drain peaches and spread them over the bread slices.
  3. Mix Custard: In a bowl, combine milk, half & half, eggs, cinnamon, and vanilla. Whisk until blended. Pour over peaches.
  4. Chill: Cover and refrigerate the assembled dish for several hours or overnight.
  5. Prepare Streusel Topping: Combine softened butter, brown sugar, flour, and cinnamon. Sprinkle over the French toast.
  6. Bake: Bake uncovered at 350°F for about an hour.
