Instructions

  1. Prepare the Dish: Preheat your oven to 350°F (175°C). Spray the inside of a casserole dish with non-stick cooking spray to prevent sticking. This will make serving and cleanup easier.
  2. Mix Dry Ingredients: Pour the old fashioned oats into the casserole dish. Add the cinnamon, softened butter, and chopped pecans (if using) directly on top of the oats. Stir gently to combine these ingredients evenly.
  3. Add Wet Ingredients and Peaches: Pour in the maple syrup, vanilla extract, and almond extract. Mix these into the oats. Gently fold in the chopped peaches and then pour the milk (or almond milk) over the mixture. Stir carefully to combine without breaking apart the peach pieces.
  4. Bake: Place the casserole dish in the preheated oven and bake for about 35 minutes or until the baked oatmeal is set in the center and slightly golden on top. It should no longer be liquid in the middle.
