Ingredients

Scale

Crust and Topping

  • 40 Oreos (crushed) – 1 package
  • 6 tbsp unsalted butter (melted and cooled)

Filling

  • 1 quart cookies and cream ice cream (softened)

Instructions

  1. Prepare Pan: Line a square baking pan with parchment paper and set aside to ensure easy removal of the ice cream sandwiches later.
  2. Melt Butter: Melt the unsalted butter over medium heat then allow it to cool to room temperature to avoid melting the ice cream when combined.
  3. Crush Oreos and Mix: Crush the Oreos into fine crumbs and combine them with the cooled melted butter in a mixing bowl to create the cookie crust mixture.
  4. Form Base Layer: Press half of the cookie and butter mixture evenly into the bottom of the prepared baking pan using a flat surface like the bottom of a measuring cup for an even, compact layer.
  5. Add Ice Cream: Spread the softened cookies and cream ice cream evenly over the cookie crust layer, smoothing it out to cover completely.
  6. Top Layer: Sprinkle and press the remaining cookie and butter mixture gently on top of the ice cream to form the top crust layer.
  7. Freeze: Place the pan into the freezer for at least one hour to allow the ice cream sandwiches to solidify.
  8. Serve: Remove from freezer, cut into 6 bars, and enjoy your homemade Oreo Ice Cream Sandwiches.

Notes

  • Use softened ice cream to make spreading easier and prevent breaking the crust.
  • Press firmly but gently to keep layers intact without crushing the ice cream.
  • Let the ice cream sandwiches freeze completely before cutting to maintain their shape.
  • You can substitute different flavors of ice cream if desired.
