  • 23 pound chuck roast
  • Salt and pepper, to taste

Seasoning Mixes

  • 1 packet ranch dressing mix
  • 1 packet dry onion soup mix (or au jus gravy mix)

Other Ingredients

  • 2 tablespoons olive oil (or vegetable oil)
  • 1/2 cup (1 stick) salted butter
  • 8 peperoncini peppers

Instructions

  1. Heat the Skillet: Heat a large skillet over high heat and add 2 tablespoons of olive oil. Ensure the skillet is very hot to properly brown or sear the beef quickly.
  2. Prepare and Sear the Roast: Pat both sides of the chuck roast dry with a paper towel, then season with salt and pepper. Place the roast in the hot skillet and sear for 2-3 minutes on each side to lock in flavors.
  3. Transfer to Slow Cooker: Move the seared roast to the slow cooker. Sprinkle the ranch dressing mix and dry onion soup mix evenly over the roast. Then top with the stick of salted butter and arrange the peperoncini peppers on and around the roast.
  4. Cook Low and Slow: Cover the slow cooker with the lid and cook on low for 8 hours. Avoid opening the lid during this time to keep the meat tender and moist.
  5. Shred and Serve: After cooking, use two forks to shred the meat, discarding any large fatty pieces. Serve warm with your favorite sides.

  • For extra flavor, you can add the juice from the peperoncini peppers into the slow cooker.
  • Using a chuck roast helps keep the meat tender during slow cooking.
  • If you do not have a slow cooker, you can use a Dutch oven and cook the roast at 300°F for about 3-4 hours covered.
  • Do not open the slow cooker lid during cooking as it will release heat and increase cooking time.
