  • 1 lb (450 grams) baby potatoes / new potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt

Toppings:

  • 1/2 cup (125 grams) sour cream
  • 2 tablespoons chopped fresh chives

Instructions

  1. Preheat the oven: Preheat the oven to 375F / 190C.
  2. Prepare the potatoes: In a bowl, toss the baby potatoes with olive oil until coated. Spread them on a baking sheet, sprinkle with salt, and bake for 30 minutes, flipping halfway through.
  3. Assemble: Cut a small wedge out of each cooked potato, fill with sour cream, and sprinkle with fresh chives.
