Instructions

  1. Preheat Oven: Preheat your oven to 400º F to prepare it for baking the assembled Mexican pizzas.
  2. Cook the Beef: In a large skillet, brown the ground beef, breaking it into small pieces as it cooks. Once fully cooked, add the taco seasoning packet along with 3/4 cup of water.   4. Assemble Base Layer: Spread about 1/4 cup of the refried beans evenly over the bottom side of each tortilla. Then top each with a layer of the cooked taco meat.
  5. Add the Middle Tortilla and Toppings: Place another crispy tortilla on top of the taco meat layer. Spread about 2 tablespoons of enchilada sauce evenly over this tortilla, then sprinkle the diced tomatoes evenly on top.
