Chicken and Marinade

  • 1 lb chicken breasts, about 2 large breasts
  • 1/2 cup Greek dressing

Rice

  • 2 bags Success Boil-in-Bag White Rice, or 2 heaping cups of cooked white rice

Vegetables & Beans

  • 1 (15.5 oz) can chickpeas, drained and rinsed
  • 1 large cucumber, chopped
  • 1 cup quartered grape tomatoes
  • 1/4 cup sliced red onion

Toppings

  • 1/2 cup crumbled feta cheese
  • 1/4 cup tzatziki
  • 1/4 cup hummus

Instructions

  1. Marinate the Chicken: Place the chicken breasts in a bowl or container and pour the Greek dressing over them. Thoroughly coat both sides of the chicken breasts with the dressing. Cover and refrigerate for at least 1 hour, preferably overnight to allow flavors to fully develop.
  2. Cook the Rice: Prepare the Success Boil-in-Bag White Rice according to package directions, or cook about 2 heaping cups of white rice if using homemade. Once cooked, set aside and keep warm for assembly.
  3. Cook the Chicken: For air frying, place the marinated chicken breasts in a lined air fryer basket. Air fry at 400°F (200°C) for 12-15 minutes, flipping halfway through cooking. Adjust the time closer to 15 minutes or a bit longer for a nicely browned color and thorough cooking. Alternatively, for baking, place the chicken breasts on a parchment paper or foil-lined baking sheet and bake at 400°F (200°C) for about 20 minutes until cooked through.
  4. Assemble the Bowls: Divide the cooked rice evenly into four bowls. Top each bowl with slices of cooked chicken, chickpeas, chopped cucumber, quartered grape tomatoes, and sliced red onion. Add dollops of hummus and tzatziki on the side and sprinkle with crumbled feta cheese. Optionally, drizzle a little extra Greek dressing over the top for added flavor.
