McGriddle Bites Recipe

5.1 from 9 reviews

McGriddle Bites are a delicious and convenient breakfast treat that combine savory turkey sausage, cheesy batter, and a hint of maple sweetness all baked into bite-sized muffins. Perfect for a quick morning bite or on-the-go snack, these muffins capture the classic McGriddle flavors with a wholesome twist using Kodiak buttermilk pancake mix.

Ingredients

Scale

Sausage Mixture

  • 1 Pound Cooked Turkey Sausage, seasoned with salt and pepper, to taste

Batter

  • 1.5 Cups Milk of Choice (low-fat cow’s milk recommended)
  • 1/4 Cup Maple Syrup (plus more for topping)
  • 2 Cups Kodiak Buttermilk Pancake Mix
  • 1 Cup Mild Cheddar Cheese (low-fat optional)

Instructions

  1. Preheat oven: Preheat your oven to 350°F and set your rack to the middle position to ensure even baking throughout the muffins.
  2. Cook sausage: In a large skillet over medium-high heat, cook the turkey sausage for about 7-8 minutes, breaking it apart with a meat masher as it cooks. Make sure the sausage is no longer pink and reaches an internal temperature of 165°F. Season with salt and pepper to taste.
  3. Combine ingredients: In a medium bowl, add the cooked turkey sausage, milk, maple syrup, Kodiak buttermilk pancake mix, and cheddar cheese. Whisk or fold with a rubber spatula until fully combined and no dry pockets of pancake mix remain.
  4. Portion batter: Using a medium or small cookie scoop, portion the batter into a greased muffin tin. This recipe yields about 18 regular-sized muffins or 48 bite-sized muffins depending on the scoop size you use.
  5. Bake: Place the muffin tin in the preheated oven and bake for 19-23 minutes, or until a toothpick inserted in the center comes out clean and the muffins are lightly golden on top.
  6. Serve: Remove from the oven, let cool slightly, and enjoy the McGriddle Bites warm with an optional drizzle of maple syrup on top for an extra touch of sweetness.

Notes

  • You can substitute the turkey sausage with pork sausage or a vegetarian sausage for different flavor profiles.
  • Using low-fat cheese and milk options keeps this recipe lighter without sacrificing taste.
  • If you prefer spicier bites, add a pinch of crushed red pepper flakes to the batter.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for longer storage.
  • Reheat in the microwave or toaster oven for a quick breakfast on busy mornings.
