Matcha Mixture
- 1 Tbsp. matcha powder, plus more for serving
- 3 Tbsp. water, room temperature
Main Ingredients
- 1 large egg white or 3 Tbsp. aquafaba
- 2 oz. coconut milk
- 1 1/2 oz. gin
- 1 oz. triple sec
- 3/4 oz. honey
- 1/2 oz. fresh lemon juice
- Ice, as needed
- Prepare the matcha: Sift the matcha powder into a small heatproof bowl to avoid lumps. Heat the water in a microwave-safe bowl on High for about 15 seconds until warm but not boiling. Add the warm water to the matcha and whisk vigorously until smooth and no dry clumps remain, creating a vibrant green tea base.
- Combine cocktail ingredients: Transfer the prepared matcha mixture to a cocktail shaker. Add the egg white (or aquafaba), coconut milk, gin, triple sec, honey, and freshly squeezed lemon juice into the shaker.
- Shake with ice: Fill the shaker with ice, cover it securely, and shake vigorously for about 20 seconds, until the outside of the shaker becomes very frosty and the mixture is well aerated to develop a frothy texture.
- Strain and serve: Strain the mixture into a chilled coupe glass. For an enhanced foamy top, spoon some foam from the shaker onto the drink. Finish by dusting a pinch of matcha powder on top for a beautiful presentation.
