Wet Ingredients
- 1 1/4 sticks unsalted butter (1/2 cup + 2 tbsp)
- 3 large eggs
- 3 tsp bourbon vanilla extract
Dry Ingredients
- 3/4 cup all-purpose flour
- 1/2 tsp kosher salt
- 2 tbsp matcha powder
- 1 cup granulated sugar
- 1/4 cup brown sugar
Additional Ingredients
- 1/2 cup white chocolate chips
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Prepare an 8×8 inch baking pan by spraying with non-stick spray and lining it with parchment paper, ensuring the paper overhangs the sides for easy removal later.
- Melt Butter: Melt the unsalted butter either in the microwave in 1-minute increments for 1-2 minutes or gently on the stovetop until fully liquefied.
- Combine White Chocolate and Matcha: In a medium bowl, mix the white chocolate chips and matcha powder. Pour the melted butter over this mixture and stir continuously until the chocolate is completely melted and the mixture is smooth with no lumps.
- Beat Sugar and Eggs: In a large mixing bowl, combine the granulated sugar and brown sugar. Using an electric mixer, add the eggs and beat the mixture for 3-5 minutes until it’s light and fluffy with an airy consistency resembling thick pancake batter.
- Incorporate Matcha Ganache: Pour the white chocolate and matcha mixture into the egg and sugar mixture. Mix thoroughly to combine, then add the bourbon vanilla extract and stir once more.
- Add Dry Ingredients: Sift together the all-purpose flour and kosher salt. Gently fold this dry mixture into the wet ingredients using a rubber spatula, being careful not to overmix to keep the batter tender.
- First Bake: Pour the batter evenly into the prepared pan and bake at 350°F for 20 minutes. When done, remove the pan using oven mitts and firmly tap it on the countertop 2-3 times to release trapped air bubbles.
- Second Bake: Return the pan to the oven and continue baking for an additional 15 minutes to ensure the brownies set properly.
- Cool and Set: Once fully baked, take the brownies out and drop the pan firmly on the counter 2 more times. Let the brownies rest for 1 hour or until they cool to room temperature and firm up.
- Slice and Serve: Carefully lift the brownies out of the pan using the parchment paper edges. Slice with a sharp knife, cleaning the knife between cuts for neat slices. Serve and enjoy your rich, matcha-infused brownies!
Notes
- Use high-quality matcha powder for the best flavor and vibrant green color.
- Don’t overbeat the flour into the wet ingredients to maintain fudgy texture.
- Allowing the brownies to rest completely improves cutting and texture.
- White chocolate chips melt better when mixed with warm melted butter.
- For a stronger matcha flavor, you can increase matcha powder up to 3 tablespoons, but it may also add more bitterness.
