Ingredients

Scale

Dough

  • 1 cup (8 fl oz / 240 ml) lukewarm water
  • ½ cup (4 oz / 115 g) granulated sugar
  • ¼ cup (2 oz / 57 g) butter, softened
  • 3 large egg yolks
  • 1 tablespoon instant yeast
  • 1¼ teaspoons salt
  • 1 teaspoon vanilla extract
  • 3½ cups (17½ oz / 497 g) bread flour
  • ½ teaspoon baking powder

For Frying

  • Oil, for frying (about 2 inches deep)

Maple Glaze

  • 2 cups (8 oz / 230 g) powdered sugar
  • ½ cup maple syrup
  • 1 tablespoon butter, melted
  • ½ teaspoon maple extract

Instructions

  1. Combine Wet Ingredients and Yeast: In the bowl of a stand mixer fitted with a dough hook or a large mixing bowl, mix lukewarm water, granulated sugar, softened butter, egg yolks, instant yeast, salt, and vanilla extract on medium-low speed until combined.
  2. Add Dry Ingredients: In a separate bowl, whisk bread flour and baking powder, then gradually add to the wet yeast mixture. Mix until dough pulls away from bowl sides but remains soft and sticky. Add extra flour a tablespoon at a time if needed. If mixing by hand, switch from wooden spoon to hands as dough thickens and knead for 10 minutes.
  3. Knead the Dough: Continue kneading on medium-low speed for 5 minutes until the dough is smooth and elastic.
  4. First Rise: Transfer dough to a large oiled bowl, cover with plastic wrap, and let rise in a warm place until doubled in size, about 1 hour.
  5. Shape Doughnuts: Turn dough onto a floured surface and roll out to a 10×12-inch rectangle. Trim edges if desired, then cut in half lengthwise into two 5×12-inch strips. Cut each strip into 6 bars, for a total of 12 donuts.
  6. Second Rise: Place bars on two floured, parchment-lined baking sheets. Cover with another baking sheet to prevent drying. Let rise until doubled in size, about 1 hour.
  7. Heat Oil for Frying: Set up a large, heavy-bottomed saucepan with 2 inches of oil. Heat to 350°F (180°C) using a candy or deep-fry thermometer.
  8. Fry the Donuts: Fry donuts one at a time for about 1 minute per side until golden brown. Drain on a wire rack set over a baking sheet until completely cool.
  9. Prepare Maple Glaze: In a shallow bowl, whisk powdered sugar, maple syrup, melted butter, and maple extract until smooth and thick.
  10. Glaze the Donuts: Dip the top half of each cooled donut into the glaze, allowing excess to drip back into the bowl. Return to the wire rack to set.
  11. Serve: Enjoy the maple bars once glaze is set. Best eaten fresh, but can be stored in an airtight container at room temperature for up to 1 day.

Notes

  • Use instant yeast for quick rising and easy mixing directly with other ingredients.
  • If dough is too sticky, add flour sparingly to avoid tough donuts.
  • Maintain oil temperature at 350°F (180°C) for even frying without oily or undercooked donuts.
  • Let donuts cool completely before glazing for best adherence.
  • Store leftovers in an airtight container for up to one day to maintain freshness.
  • For a stronger maple flavor, use pure maple syrup and high-quality maple extract.
