For the Cookie Dough:

- 200g granulated sugar
- 120g light or dark brown sugar
- 1 egg, at room temperature
- 1 egg yolk, at room temperature
- 1 tsp vanilla extract
- 200g All-Purpose Flour, sifted
- 80g Cocoa, sifted
- 1 tsp kosher salt
- ½ tsp baking powder
- ½ tsp baking soda
For Mix-Ins:
- 300g Kit Kats, coarsely chopped, plus extra for topping (optional)
- 150g chopped chocolate (dark)
- Preheat the oven: Preheat to 350°F / 180°C and line baking sheets with parchment paper.
- Cream ingredients: Cream butter, granulated sugar, and brown sugar until fluffy.
- Add eggs and vanilla: Mix in egg, egg yolk, and vanilla.
- Combine dry ingredients: Add flour, cocoa, salt, baking powder, and baking soda; mix until combined.
- Add mix-ins: Mix in chopped Kit Kat and chocolate.
- Scoop dough: Use a cookie scoop to place dough balls on baking sheet.
- Add toppings: Press additional chopped Kit Kat on top of each ball.
- Bake: Bake for 15-16 minutes until edges are set.
