For the Cookie Dough:

  • 250g unsalted butter, at room temperature
  • 200g granulated sugar
  • 120g light or dark brown sugar
  • 1 egg, at room temperature
  • 1 egg yolk, at room temperature
  • 1 tsp vanilla extract
  • 200g All-Purpose Flour, sifted
  • 80g Cocoa, sifted
  • 1 tsp kosher salt
  • ½ tsp baking powder
  • ½ tsp baking soda

For Mix-Ins:

  • 300g Kit Kats, coarsely chopped, plus extra for topping (optional)
  • 150g chopped chocolate (dark)

Instructions

  1. Preheat the oven: Preheat to 350°F / 180°C and line baking sheets with parchment paper.
  2. Cream ingredients: Cream butter, granulated sugar, and brown sugar until fluffy.
  3. Add eggs and vanilla: Mix in egg, egg yolk, and vanilla.
  4. Combine dry ingredients: Add flour, cocoa, salt, baking powder, and baking soda; mix until combined.
  5. Add mix-ins: Mix in chopped Kit Kat and chocolate.
  6. Scoop dough: Use a cookie scoop to place dough balls on baking sheet.
  7. Add toppings: Press additional chopped Kit Kat on top of each ball.
  8. Bake: Bake for 15-16 minutes until edges are set.
  9. Cool and store: Cool on pans before transferring to a rack; store in an airtight container.

Notes

  • You can slightly flatten the cookies after baking for a neater appearance.
